We are talking desktops here, right, so why not just use the browser?
Also, there are many more mail apps than just Mail, try Airmail or Cloudmagic or something.

You don’t get notifications via Gmail in Safari if you don’t have Gmail open in a tab.

that’s okay… just leave it open like you would the app. Or, install Chrome for the sole purpose of having it be your "mail app" and run Safari for everything else.
If email is that important, why bother with Apple’s apps anyway, right? They are typically simplified versions of more powerful programs. Try some better apps. Spend a few bucks. Whatever.
Get creative and stop trying to force something to do what it clearly doesn’t do well.

So, you’re saying, it’s okay that Apple’s default email app, the one that takes advantage of all the continuity features that Apple promotes as a differentiator, doesn’t work well with one of the most popular email services in the world because there are other non-Apple apps out there.

sorry, that’s only worked for me 2 times, so I can’t speak to that.
But, I can say that by using gmail.com as your default "mail app", if you start an email on the desktop, you can finish it on your phone if you are so inclined. It’ll be in your drafts. And it takes up 0 space on one’s computer.
