I have two 1080P monitors with 120Hz refresh rate. One I use for gaming, and one I use for everything else, (browsing, e-mail, spreadsheets, etc.). Would a single nVidia GTX 980 run both of them well?

I think you can even game at 38401080 with that setup. GTX980 is ridiculously powerful.

Yes. I also do this. 4GB is plenty for 1080P and watching Netflix on the second monitor doesn’t affect performance at all

Yes. The GTX 980 has more than enough horsepower. It also has 1 HDMI 2.0, 3 DisplayPort 1.2 (at least the reference design does), and a DVI port, of which 4 can be used concurrently, and the HDMI and DPs can all drive 4K 60Hz monitors.

My single 970 runs two screens including one in 4K with gaming. You’re more than fine!

Yes, it will be more than enough to drive these monitors well, just don’t expect to game at ultra settings with 120 Hz on recent games, you will need to sacrifice some settings.
